Zanna Van Dijk shares two of her favourite healthy snack recipes, and spills the beans on her live cooking demonstration at Balance Festival, with friends The Food Medic, Healthy Chef Steph and Clean Eating Alice.
Lemon Chia Energy Balls
15 large dates
1/3 cup almonds
2 tbsp desiccated coconut
2 tbsp chia seeds
The zest of a lemon
Pop all the ingredients in a food processor and combine. Once the mixture has turned into a paste, use your hands to mould it into balls. Store these in the fridge in an air tight container for up to a week.
Makes 1 large batch to share
1 x 400g tin of chickpeas, drained rinsed and dried
250 cooked beetroot
2 garlic cloves, peeled and diced
2 tbsp tahini
The juice of 1 lemon
2 tbsp extra virgin olive oil
A pinch of salt
1 tsp ground cumin
This recipe is super simple. Just pop all the ingredients into a food processor and combine until smooth. Taste the hummus and add more salt and pepper if needed. You can store it in a sealed container in the fridge for up to a week.
My Top 3 Sensible Snacking Tips
You can't expect yourself to snack healthily unless you prepare. Make sure you have balanced snacks in stock at your house or office, and do any prep that is needed e.g. chopping up carrot sticks and popping them in tupperware boxes.
Make it convenient.
Always keep your healthy snacks in close reach and your less healthy treats in hard to reach places, it makes it so much easier to make the best choice.
Control your portion sizes.
Snacking can often turn into full on meals without you realising it. Make sure you look at how much you're actually eating and consider how much energy you actually require.
