Roast Squash Salad with Black Quinoa, Avocado Mousse, Pomegranate and Pistachios.
Ingredients:
- 1 x butternut squash
- 2 x avocado
- 1 packet/bunch tender stem broccoli
- Pomegranate seeds
- Handful pistachios, shelled
- 2 x lemons
- 1 x small tub plain coyo yoghurt
- 1 bag of spinach
- Olive oil /Himalayan salt
- 2 cups black quinoa
