Make Your Own Seasonal Miso Soup Broth
A simple healing dish to align with the season, by Academy Healing Nutrition.
Academy Healing Nutrition invites us to find harmony with the energy of late Summer and early Autumn by using its available medicines for healing. This deliciously nourishing Miso Soup Broth recipe has arrived just in time to help nurture our stomach and spleen, the organs that according to Traditional Chinese Medicine are most receptive for healing during this time, as we edge into the cooler seasons.

Containing probiotics, electrolytes and all the other minerals that play an essential role in nourishing our digestive organs and supporting our immune systems, this delicious recipe will no doubt become your autumnal go-to for strength and immunity.

Don't forget to check out the optional seasonal variations for added health benefits, too!

Basic Miso Soup Broth

  • 1 tbsp miso paste
  • 1 handful shiitake mushrooms
  • 1 piece kombu seaweed
  • 3 sprigs of fresh thyme
  • vegetables of choice

1. Make a broth by adding to a pot of water a handful of immune-boosting shiitake mushrooms, a small piece of mineral-rich kombu seaweed and a few sprigs of fresh thyme.

2. Bring to the boil, cover and simmer for 45 minutes.

3. Add prepared vegetables of your choice, in a range of colors (longercooking ones first, leafy greens and cooked grains last); cover and simmer until tender.

4. Place a cup of the broth into a bowl. Add a large spoonful of miso and stir to dissolve.

5. Return to the pot and add freshly grated ginger.

6. Adjust seasonings to taste.

Added Healing Benefits for the Seasons

Tailor the recipe with herbs and spices to your preference, and bulk out with local and seasonal vegetables and grains. Here are some ideas for the changing seasons below:

Late Summer: Harmonize your stomach and spleen system with the sweet taste of pumpkin, squash, onion
and fennel, using sweet white, chickpea or millet miso.

Autumn: Strengthen your immune system with a ragout of fall harvest vegetables, daikon, mushrooms, astragalus, and use a more aged, red miso.

Winter: Seek deep nourishment from kidney-supportive black beans, root vegetables, black mushrooms, black
sesame, nori, and soba noodles. Making your soup thicker, stew-like, and using more fully-aged barley or hatcho miso.
