There's nothing like homemade treats to show someone you really care at Christmas. This chocolate superfood bark is the perfect combination of easy to whip up and impressive to look at - and tastes delicious too!
140g (1 cup) cocoa butter (finely chopped or in buttons)
4 tbsp syrup
40 g (½ cup) cacao powder
1 tsp vanilla
30g dried cranberries
5g desiccated coconut
1. Heat the cocoa butter over a bain-marie until melted.
2. Add in the syrup and whisk until smooth. Remove from the heat before stirring in the cocoa powder, vanilla and a pinch of salt. Whisk until smooth with no lumps.
3. Pour the chocolate into a lined tray and sprinkle over the pistachios, dried cranberries and desiccated coconut. Place flat in the fridge to set for 30-60 minutes.
4. Once firm, roughly break up the chocolate bark and wrap in string as gifts.
