Healthy Meal Swap: Seasonal Butternut Squash and Quinoa
Stuck in a tired recipe loop? Keep throwing the same staple ingredients into your shopping basket? Time to switch it up. Pollen + Grace’s Founder Stephanie Johnson joins Zanna Van Dijk in the Balance Kitchen to cook up a healthy storm.



Roast Squash Salad with Black Quinoa, Avocado Mousse, Pomegranate and Pistachios.

Ingredients:
 
  • 1 x butternut squash
  • 2 x avocado
  • 1 packet/bunch tender stem broccoli
  • Pomegranate seeds
  • Handful pistachios, shelled
  • 2 x lemons
  • 1 x small tub plain coyo yoghurt
  • 1 bag of spinach
  • Olive oil /Himalayan salt
  • 2 cups black quinoa
